Description

Ingredients

  • 1 cup jasmine rice
  • 1 1/2 cups water
  • 1 1/2 cups diced pumpkin
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground cinnamon


Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. Heat olive oil in a pot over medium heat.
  3. Add diced pumpkin and sauté for 3 minutes.
  4. Add rinsed rice, salt, pepper, and cinnamon. Stir well.
  5. Pour in water and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15 minutes.
  7. Remove from heat and let it sit covered for 5 minutes.
  8. Fluff with a fork before serving.
