A simple and flavorful recipe combining jasmine rice and pumpkin for a comforting dish.
Ingredients
- 1 cup jasmine rice
- 1 1/2 cups water
- 1 1/2 cups diced pumpkin
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp ground cinnamon
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- Heat olive oil in a pot over medium heat.
- Add diced pumpkin and sauté for 3 minutes.
- Add rinsed rice, salt, pepper, and cinnamon. Stir well.
- Pour in water and bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff with a fork before serving.
Notes
- Use fresh pumpkin for best flavor.
- Adjust spices to your preference.
- Store leftovers in an airtight container for up to 3 days.
