Description
These bars combine zesty lemon with sweet blueberries.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, cold and cubed
- 1 large egg yolk
- 1 teaspoon lemon zest
- 1/4 cup lemon juice
- 1 cup fresh blueberries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1/4 cup water
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add the egg yolk and lemon zest. Mix until just combined.
- Press the mixture into a 8×8 inch baking pan.
- Bake for 15 minutes.
- In a saucepan, combine blueberries, sugar, cornstarch, and water.
- Cook over medium heat until the blueberries burst and the mixture thickens.
- Pour the blueberry mixture over the baked crust.
- Bake for 25-30 minutes.
- Let cool completely before cutting into bars.
Notes
- For best results, use fresh blueberries.
- You can add a powdered sugar glaze.
