Lemon Blueberry Bars

Description

These bars combine zesty lemon with sweet blueberries.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 1 large egg yolk
  • 1 teaspoon lemon zest
  • 1/4 cup lemon juice
  • 1 cup fresh blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Add the egg yolk and lemon zest. Mix until just combined.
  5. Press the mixture into a 8×8 inch baking pan.
  6. Bake for 15 minutes.
  7. In a saucepan, combine blueberries, sugar, cornstarch, and water.
  8. Cook over medium heat until the blueberries burst and the mixture thickens.
  9. Pour the blueberry mixture over the baked crust.
  10. Bake for 25-30 minutes.
  11. Let cool completely before cutting into bars.

Notes

  • For best results, use fresh blueberries.
  • You can add a powdered sugar glaze.
