Description
A simple and flavorful roasted chicken perfect for a romantic dinner.
Ingredients
- 1 whole chicken (about 3-4 pounds)
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the chicken and pat it dry.
- In a small bowl, mix lemon zest, lemon juice, olive oil, rosemary, thyme, salt, and pepper.
- Rub the herb mixture all over the chicken, including under the skin of the breast.
- Place the chicken in a roasting pan.
- Roast for 60-70 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Let the chicken rest for 10 minutes before carving and serving.
Notes
- For extra flavor, add some vegetables like potatoes and carrots to the roasting pan.
- You can use dried herbs if you don’t have fresh ones, but use about 1 teaspoon of each.
