Description

A simple and flavorful roasted chicken perfect for a romantic dinner.


Ingredients

  • 1 whole chicken (about 3-4 pounds)
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the chicken and pat it dry.
  3. In a small bowl, mix lemon zest, lemon juice, olive oil, rosemary, thyme, salt, and pepper.
  4. Rub the herb mixture all over the chicken, including under the skin of the breast.
  5. Place the chicken in a roasting pan.
  6. Roast for 60-70 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  7. Let the chicken rest for 10 minutes before carving and serving.

Notes

  • For extra flavor, add some vegetables like potatoes and carrots to the roasting pan.
  • You can use dried herbs if you don’t have fresh ones, but use about 1 teaspoon of each.
