Description

A refreshing cake with lemon and lavender flavors.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup lemon juice
  • 1 tablespoon dried lavender flowers
  • Lemon Buttercream Frosting (recipe below)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time.
  4. Stir in milk, lemon juice, and lavender.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Divide batter among prepared pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cakes cool in pans for 10 minutes before inverting onto a wire rack to cool completely.
  9. Frost with Lemon Buttercream Frosting.

Notes

  • For the frosting, combine 1 cup (2 sticks) unsalted butter, softened, 4 cups powdered sugar, 1/4 cup lemon juice, and 1 teaspoon vanilla extract. Beat until smooth and creamy.
