Description

A simple pasta dish with lemon, ricotta cheese, and herbs.


Ingredients

  • 1 pound pasta
  • 15 ounces ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • Zest and juice of 1 lemon
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions.
  2. In a bowl, combine ricotta, Parmesan, lemon zest, lemon juice, basil, salt, and pepper.
  3. Drain the pasta, reserving some pasta water.
  4. Add the pasta to the ricotta mixture. Toss to combine, adding pasta water if needed to create a sauce.
  5. Serve immediately.

  • Add red pepper flakes for heat.
