Description
A simple pasta dish with lemon, ricotta cheese, and herbs.
Ingredients
- 1 pound pasta
- 15 ounces ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- Zest and juice of 1 lemon
- 1/4 cup chopped fresh basil
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions.
- In a bowl, combine ricotta, Parmesan, lemon zest, lemon juice, basil, salt, and pepper.
- Drain the pasta, reserving some pasta water.
- Add the pasta to the ricotta mixture. Toss to combine, adding pasta water if needed to create a sauce.
- Serve immediately.
Notes
- Add red pepper flakes for heat.
- Use different herbs like parsley or oregano.
