Description
A flavorful and hearty vegetarian curry.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper (optional)
- 1 cup red lentils, rinsed
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup vegetable broth
- 1 cup mixed vegetables (carrots, peas, etc.)
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and ginger; cook for 1 minute.
- Stir in curry powder, turmeric, and cayenne pepper (if using). Cook for 30 seconds.
- Add lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in mixed vegetables and cook until tender, about 10 minutes.
- Season with salt and pepper.
- Garnish with fresh cilantro before serving.
Notes
- Serve with rice or naan.
