Description

A flavorful and hearty vegetarian curry.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp curry powder
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup red lentils, rinsed
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1 cup mixed vegetables (carrots, peas, etc.)
  • Salt and pepper to taste
  • Fresh cilantro, for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and ginger; cook for 1 minute.
  4. Stir in curry powder, turmeric, and cayenne pepper (if using). Cook for 30 seconds.
  5. Add lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Stir in mixed vegetables and cook until tender, about 10 minutes.
  7. Season with salt and pepper.
  8. Garnish with fresh cilantro before serving.
