Description
A refreshing pasta salad with chicken and a zesty lime dressing.
Ingredients
- 8 ounces pasta
- 2 cups cooked chicken, diced
- 1 red bell pepper, chopped
- 1/2 red onion, thinly sliced
- 1/2 cup chopped cilantro
- 1/4 cup olive oil
- Juice of 2 limes
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions.
- In a large bowl, combine cooked pasta, chicken, bell pepper, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, and honey. Season with salt and pepper.
- Pour dressing over pasta salad and toss to combine.
- Refrigerate for at least 30 minutes before serving.
