Lime & White Chocolate Drizzle Cake

Description

A zesty cake with a sweet white chocolate drizzle.


Ingredients

  • 225g unsalted butter, softened
  • 225g caster sugar
  • 4 large eggs
  • 225g self-raising flour
  • zest of 2 limes
  • For the drizzle: 100g white chocolate, melted; juice of 1 lime


Instructions

  1. Preheat your oven to 180°C (160°C fan/ gas mark 4). Grease and flour a loaf tin.
  2. Cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time.
  4. Gently fold in the flour and lime zest.
  5. Pour the batter into the prepared tin and bake for 45-50 minutes, or until a skewer comes out clean.
  6. Let the cake cool in the tin for 10 minutes before transferring to a wire rack.
  7. For the drizzle, mix the melted white chocolate and lime juice.
  8. Drizzle over the cooled cake.

Notes

  • You can add a pinch of salt to the batter.
  • Let the cake cool completely before drizzling.
