Description
A zesty cake with a sweet white chocolate drizzle.
Ingredients
- 225g unsalted butter, softened
- 225g caster sugar
- 4 large eggs
- 225g self-raising flour
- zest of 2 limes
- For the drizzle: 100g white chocolate, melted; juice of 1 lime
Instructions
- Preheat your oven to 180°C (160°C fan/ gas mark 4). Grease and flour a loaf tin.
- Cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time.
- Gently fold in the flour and lime zest.
- Pour the batter into the prepared tin and bake for 45-50 minutes, or until a skewer comes out clean.
- Let the cake cool in the tin for 10 minutes before transferring to a wire rack.
- For the drizzle, mix the melted white chocolate and lime juice.
- Drizzle over the cooled cake.
Notes
- You can add a pinch of salt to the batter.
- Let the cake cool completely before drizzling.
