Description
Creamy, sun-dried tomato chicken dish.
Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon butter
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil and butter in a skillet over medium-high heat.
- Sear chicken for 5-7 minutes per side, until cooked through. Remove and set aside.
- Add garlic and sun-dried tomatoes to the skillet; cook for 1 minute.
- Pour in chicken broth and heavy cream. Bring to a simmer.
- Stir in Parmesan cheese until melted.
- Return chicken to the skillet. Simmer for 5 minutes.
- Garnish with fresh basil.

- Serve with pasta or rice.
