Description

A simple and flavorful skillet dish with zucchini, corn, and Mexican spices.


Ingredients

  • 2 medium zucchini, diced
  • 1 cup corn kernels
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1/2 cup shredded cheddar cheese
  • Optional toppings: sour cream, salsa, avocado


Instructions

  1. Heat a large skillet over medium heat.
  2. Add onion and bell pepper; cook until softened, about 5 minutes.
  3. Add zucchini and corn; cook for another 5 minutes.
  4. Stir in black beans, taco seasoning, and water.
  5. Bring to a simmer and cook until zucchini is tender, about 10 minutes.
  6. Sprinkle with cheese and cook until melted.
  7. Serve with your favorite toppings.

Notes

  • Adjust the amount of taco seasoning to your taste.
