A simple and flavorful skillet dish with zucchini, corn, and Mexican spices.
Ingredients
- 2 medium zucchini, diced
- 1 cup corn kernels
- 1/2 onion, chopped
- 1 red bell pepper, chopped
- 1 (15 ounce) can black beans, rinsed and drained
- 1 packet taco seasoning
- 1/2 cup water
- 1/2 cup shredded cheddar cheese
- Optional toppings: sour cream, salsa, avocado
Instructions
- Heat a large skillet over medium heat.
- Add onion and bell pepper; cook until softened, about 5 minutes.
- Add zucchini and corn; cook for another 5 minutes.
- Stir in black beans, taco seasoning, and water.
- Bring to a simmer and cook until zucchini is tender, about 10 minutes.
- Sprinkle with cheese and cook until melted.
- Serve with your favorite toppings.
