Description
A simple and healthy pasta dish with fresh vegetables.
Ingredients
- 1 pound penne pasta
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup vegetable broth
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions.
- Heat olive oil in a large pan. Add onion and cook until softened.
- Add garlic, bell peppers, broccoli, and zucchini. Cook for 5-7 minutes.
- Stir in cherry tomatoes and vegetable broth. Simmer for 3 minutes.
- Season with salt and pepper.
- Add cooked pasta and Parmesan cheese. Toss to combine.
Notes
- Add other vegetables you like.
- Use whole wheat pasta for extra fiber.
