Description

A simple and healthy pasta dish with fresh vegetables.


Ingredients

  • 1 pound penne pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup vegetable broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions.
  2. Heat olive oil in a large pan. Add onion and cook until softened.
  3. Add garlic, bell peppers, broccoli, and zucchini. Cook for 5-7 minutes.
  4. Stir in cherry tomatoes and vegetable broth. Simmer for 3 minutes.
  5. Season with salt and pepper.
  6. Add cooked pasta and Parmesan cheese. Toss to combine.

Notes

  • Add other vegetables you like.
  • Use whole wheat pasta for extra fiber.
