Description
Grilled salmon fillets topped with pesto, served with a fresh strawberry cucumber salsa.
Ingredients
- 2 salmon fillets (6-8 ounces each)
- 2 tablespoons pesto
- 1 cup strawberries, diced
- 1/2 cucumber, peeled, seeded, and diced
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh mint, chopped
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- Brush the salmon fillets with pesto.
- In a bowl, combine strawberries, cucumber, red onion, mint, lime juice, and olive oil. Season with salt and pepper.
- Grill the salmon for 4-6 minutes per side, or until cooked through.
- Serve the grilled salmon topped with the strawberry cucumber salsa.
Notes
- For best results, use fresh pesto.
- Adjust the amount of lime juice to your preference.
- You can add a pinch of red pepper flakes to the salsa for some heat.
