Description

Grilled salmon fillets topped with pesto, served with a fresh strawberry cucumber salsa.


Ingredients

  • 2 salmon fillets (6-8 ounces each)
  • 2 tablespoons pesto
  • 1 cup strawberries, diced
  • 1/2 cucumber, peeled, seeded, and diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the salmon fillets with pesto.
  3. In a bowl, combine strawberries, cucumber, red onion, mint, lime juice, and olive oil. Season with salt and pepper.
  4. Grill the salmon for 4-6 minutes per side, or until cooked through.
  5. Serve the grilled salmon topped with the strawberry cucumber salsa.

Notes

  • For best results, use fresh pesto.
  • Adjust the amount of lime juice to your preference.
  • You can add a pinch of red pepper flakes to the salsa for some heat.
