Description

A classic prime rib roast recipe for a tender and flavorful centerpiece.


Ingredients

  • 1 (5-7 pound) standing rib roast
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme


Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Pat the rib roast dry with paper towels.
  3. In a small bowl, mix together the salt, pepper, garlic powder, onion powder, rosemary, and thyme.
  4. Rub the entire roast with olive oil, then generously coat it with the spice mixture.
  5. Place the roast, fat-side up, on a rack in a roasting pan.
  6. Roast at 450°F (230°C) for 15 minutes.
  7. Reduce the oven temperature to 325°F (160°C) and continue roasting for about 12-15 minutes per pound, or until a meat thermometer inserted into the thickest part registers 120°F (49°C) for rare, 130°F (54°C) for medium-rare, or 140°F (60°C) for medium.
  8. Remove the roast from the oven, tent loosely with foil, and let it rest for 20-30 minutes before carving.
