Description
Make these easy pink velvet cupcakes for a sweet Valentine’s Day treat.
Ingredients
- 1 box of red velvet cake mix
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 container (16 ounces) cream cheese frosting
- Pink food coloring (optional)
- Sprinkles for decoration
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large bowl, combine the cake mix, buttermilk, oil, eggs, and vanilla extract. Mix until just combined.
- If desired, add a few drops of pink food coloring to the batter.
- Fill each cupcake liner about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Frost the cupcakes with cream cheese frosting.
- Decorate with sprinkles.
Notes
- For a richer flavor, use full-fat buttermilk.
- You can make the cupcakes ahead of time and store them in an airtight container.
