A hearty dish featuring pumpkin stuffed with seasoned rice. Perfect for fall dinners.
Ingredients
- 1 small pumpkin
- 1 cup cooked rice
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1 tbsp chopped parsley
Instructions
- Preheat oven to 375°F.
- Cut the top off the pumpkin and scoop out seeds.
- Sauté onion and garlic in olive oil until soft.
- Mix cooked rice with sautéed onions, garlic, salt, pepper, and paprika.
- Stuff pumpkin with rice mixture.
- Place pumpkin on baking sheet and bake for 40 minutes.
- Sprinkle with parsley before serving.
