Description

A hearty dish featuring pumpkin stuffed with seasoned rice. Perfect for fall dinners.


Ingredients

  • 1 small pumpkin
  • 1 cup cooked rice
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1 tbsp chopped parsley


Instructions

  1. Preheat oven to 375°F.
  2. Cut the top off the pumpkin and scoop out seeds.
  3. Sauté onion and garlic in olive oil until soft.
  4. Mix cooked rice with sautéed onions, garlic, salt, pepper, and paprika.
  5. Stuff pumpkin with rice mixture.
  6. Place pumpkin on baking sheet and bake for 40 minutes.
  7. Sprinkle with parsley before serving.
