Description

A flavorful prime rib roast coated in a savory garlic herb butter crust, perfect for a special occasion.


Ingredients

  • 1 (4-5 pound) prime rib roast
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup unsalted butter, softened


Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
  3. Add the softened butter to the garlic herb mixture and mix until well combined.
  4. Pat the prime rib roast dry with paper towels.
  5. Spread the garlic herb butter evenly over the entire surface of the roast.
  6. Place the roast, fat-side up, on a rack in a roasting pan.
  7. Roast for 15 minutes at 450°F (230°C).
  8. Reduce the oven temperature to 325°F (160°C) and continue roasting for about 12-15 minutes per pound, or until a meat thermometer inserted into the thickest part registers 120°F (49°C) for rare, 130°F (54°C) for medium-rare, or 140°F (60°C) for medium.
  9. Remove the roast from the oven and let it rest for 15-20 minutes before carving.

Notes

  • For a crispier crust, you can broil the roast for the last 1-2 minutes of cooking, watching carefully to prevent burning.
  • Serve with your favorite au jus or horseradish sauce.
