A flavorful prime rib roast coated in a savory garlic herb butter crust, perfect for a special occasion.
Ingredients
- 1 (4-5 pound) prime rib roast
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 cup unsalted butter, softened
Instructions
- Preheat your oven to 450°F (230°C).
- In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
- Add the softened butter to the garlic herb mixture and mix until well combined.
- Pat the prime rib roast dry with paper towels.
- Spread the garlic herb butter evenly over the entire surface of the roast.
- Place the roast, fat-side up, on a rack in a roasting pan.
- Roast for 15 minutes at 450°F (230°C).
- Reduce the oven temperature to 325°F (160°C) and continue roasting for about 12-15 minutes per pound, or until a meat thermometer inserted into the thickest part registers 120°F (49°C) for rare, 130°F (54°C) for medium-rare, or 140°F (60°C) for medium.
- Remove the roast from the oven and let it rest for 15-20 minutes before carving.
Notes
- For a crispier crust, you can broil the roast for the last 1-2 minutes of cooking, watching carefully to prevent burning.
- Serve with your favorite au jus or horseradish sauce.
