Ingredients

  • 1 medium pumpkin
  • 2 cups cooked rice
  • 1 cup diced vegetables (carrots, bell peppers, zucchini)
  • 1/2 cup cooked ground meat (optional)
  • 1/4 cup grated cheese
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried herbs (thyme, rosemary)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the top off the pumpkin and scoop out seeds.
  3. Rub inside with olive oil, salt, and pepper.
  4. Mix rice, vegetables, meat (if using), cheese, and herbs.
  5. Stuff pumpkin with mixture.
  6. Place pumpkin on baking sheet and roast for 45-60 minutes.
  7. Remove when pumpkin is tender.
