A hearty roasted stuffed pumpkin filled with flavorful ingredients.
Ingredients
- 1 medium pumpkin
- 2 cups cooked rice
- 1 cup diced vegetables (carrots, bell peppers, zucchini)
- 1/2 cup cooked ground meat (optional)
- 1/4 cup grated cheese
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried herbs (thyme, rosemary)
Instructions
- Preheat oven to 375°F (190°C).
- Cut the top off the pumpkin and scoop out seeds.
- Rub inside with olive oil, salt, and pepper.
- Mix rice, vegetables, meat (if using), cheese, and herbs.
- Stuff pumpkin with mixture.
- Place pumpkin on baking sheet and roast for 45-60 minutes.
- Remove when pumpkin is tender.
Notes
- Use firm pumpkin varieties like sugar pie or kabocha.
- Adjust cooking time based on pumpkin size.
- Serve hot with crusty bread.
