Romanian Chicken & Pea Stew

Description

A simple stew with chicken, peas, and savory flavors.


Ingredients

  • 1.5 lbs chicken pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 tsp dried thyme
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot.
  2. Brown chicken pieces. Remove and set aside.
  3. Add onion to the pot and cook until softened.
  4. Add garlic and cook for 1 minute.
  5. Return chicken to the pot. Add tomatoes, broth, and thyme.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Add peas and cook for 5 minutes, or until chicken is cooked through.
  8. Season with salt and pepper.

Notes

  • Serve hot with crusty bread.
  • Garnish with fresh parsley, if desired.
