Description
A simple stew with chicken, peas, and savory flavors.
Ingredients
- 1.5 lbs chicken pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 4 cups chicken broth
- 1 cup frozen peas
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot.
- Brown chicken pieces. Remove and set aside.
- Add onion to the pot and cook until softened.
- Add garlic and cook for 1 minute.
- Return chicken to the pot. Add tomatoes, broth, and thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add peas and cook for 5 minutes, or until chicken is cooked through.
- Season with salt and pepper.
Notes
- Serve hot with crusty bread.
- Garnish with fresh parsley, if desired.
