Description

Make festive shamrock-shaped sugar cookies for St. Patrick’s Day.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 egg
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Green gel food coloring
  • Royal icing (recipe below)


Instructions

  1. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  2. Beat in the vanilla extract, almond extract, and egg.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half. Add green food coloring to one half and mix until the color is even.
  6. Wrap each dough half in plastic wrap and chill for at least 30 minutes.
  7. Preheat your oven to 375°F (190°C).
  8. On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
  9. Use a shamrock cookie cutter to cut out shapes.
  10. Place the cookies on a baking sheet lined with parchment paper.
  11. Bake for 8-10 minutes, or until the edges are lightly golden.
  12. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  13. Decorate with royal icing.

Notes

  • For the royal icing: Whisk together 3 cups powdered sugar, 2 tablespoons meringue powder, and 5 tablespoons water until smooth. Add green food coloring as desired.
