Description
Make festive shamrock-shaped sugar cookies for St. Patrick’s Day.
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 egg
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Green gel food coloring
- Royal icing (recipe below)
Instructions
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the vanilla extract, almond extract, and egg.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the dough in half. Add green food coloring to one half and mix until the color is even.
- Wrap each dough half in plastic wrap and chill for at least 30 minutes.
- Preheat your oven to 375°F (190°C).
- On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
- Use a shamrock cookie cutter to cut out shapes.
- Place the cookies on a baking sheet lined with parchment paper.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Decorate with royal icing.
Notes
- For the royal icing: Whisk together 3 cups powdered sugar, 2 tablespoons meringue powder, and 5 tablespoons water until smooth. Add green food coloring as desired.
