Description
A classic comfort food, Shepherd’s Pie features a savory meat base topped with a fluffy layer of mashed potatoes.
Ingredients
- 1 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 lb ground lamb
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 cup beef broth
- 1 tbsp tomato paste
- Salt and pepper to taste
- 3 lbs potatoes, peeled and quartered
- 1/2 cup milk
- 2 tbsp butter
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes.
- Add ground lamb and cook, breaking it up, until browned. Drain off any excess fat.
- Stir in thyme, rosemary, beef broth, and tomato paste. Season with salt and pepper. Bring to a simmer and cook for 15 minutes, or until the sauce has thickened.
- While the meat sauce simmers, boil potatoes until tender. Drain and mash with milk and butter. Season with salt and pepper.
- Preheat oven to 375°F (190°C).
- Pour the meat mixture into a baking dish. Top with mashed potatoes.
- Bake for 20-25 minutes, or until the potatoes are golden brown.
Notes
- You can substitute ground beef for lamb.
- Add a layer of frozen peas to the meat mixture for extra vegetables.
