Description

A classic comfort food, Shepherd’s Pie features a savory meat base topped with a fluffy layer of mashed potatoes.


Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 lb ground lamb
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • 3 lbs potatoes, peeled and quartered
  • 1/2 cup milk
  • 2 tbsp butter


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes.
  2. Add ground lamb and cook, breaking it up, until browned. Drain off any excess fat.
  3. Stir in thyme, rosemary, beef broth, and tomato paste. Season with salt and pepper. Bring to a simmer and cook for 15 minutes, or until the sauce has thickened.
  4. While the meat sauce simmers, boil potatoes until tender. Drain and mash with milk and butter. Season with salt and pepper.
  5. Preheat oven to 375°F (190°C).
  6. Pour the meat mixture into a baking dish. Top with mashed potatoes.
  7. Bake for 20-25 minutes, or until the potatoes are golden brown.

Notes

  • You can substitute ground beef for lamb.
  • Add a layer of frozen peas to the meat mixture for extra vegetables.
