Description
A hearty stew with tender beef, vegetables, and barley, cooked in a slow cooker.
Ingredients
- 1.5 lbs beef stew meat
- 1 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 cup pearl barley
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet. Brown the beef on all sides.
- Place the browned beef in the slow cooker.
- Add onion, carrots, celery, and garlic to the slow cooker.
- Pour in beef broth.
- Stir in barley, thyme, and rosemary.
- Season with salt and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until the beef is tender.
Notes
- You can add other vegetables, such as potatoes or mushrooms.
- For a thicker stew, you can mix a tablespoon of cornstarch with a little cold water and stir it into the stew during the last 30 minutes of cooking.
