Smoky Sausage & Kale Winter Soup

Description

A hearty soup with smoky sausage, kale, and vegetables.


Ingredients

  • 1 pound Italian sausage, removed from casings
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 bunch kale, chopped
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Heat olive oil in a large pot. Brown the sausage, breaking it up. Remove and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened.
  3. Add garlic and cook for 1 minute.
  4. Pour in chicken broth. Add smoked paprika, salt, and pepper.
  5. Bring to a boil, then simmer for 15 minutes.
  6. Add kale and sausage. Cook until kale is tender.
  7. Season to taste and serve.

Notes

  • You can add other vegetables like potatoes or beans.
  • For a vegetarian version, use vegetable broth and a plant-based sausage.
