Description
A hearty soup with smoky sausage, kale, and vegetables.
Ingredients
- 1 pound Italian sausage, removed from casings
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 bunch kale, chopped
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot. Brown the sausage, breaking it up. Remove and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened.
- Add garlic and cook for 1 minute.
- Pour in chicken broth. Add smoked paprika, salt, and pepper.
- Bring to a boil, then simmer for 15 minutes.
- Add kale and sausage. Cook until kale is tender.
- Season to taste and serve.
Notes
- You can add other vegetables like potatoes or beans.
- For a vegetarian version, use vegetable broth and a plant-based sausage.
