Spicy Guinness Beef Stew

Description

A hearty beef stew with a kick, perfect for a cold day.


Ingredients

  • 2 lbs beef stew meat
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1 (12 ounce) bottle Guinness stout
  • 4 cups beef broth
  • 1 lb potatoes, peeled and cubed
  • 1 bay leaf
  • Salt and pepper to taste


Instructions

  1. Season beef with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches, then set aside.
  3. Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
  4. Stir in garlic, tomato paste, smoked paprika, and cayenne pepper. Cook for 1 minute.
  5. Pour in Guinness stout and beef broth. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
  6. Return the beef to the pot. Add potatoes and bay leaf.
  7. Reduce heat to low, cover, and simmer for 2-3 hours, or until the beef is tender.
  8. Remove bay leaf before serving.

  • Serve with crusty bread for dipping.
