Description
A hearty beef stew with a kick, perfect for a cold day.
Ingredients
- 2 lbs beef stew meat
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1 (12 ounce) bottle Guinness stout
- 4 cups beef broth
- 1 lb potatoes, peeled and cubed
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Season beef with salt and pepper.
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches, then set aside.
- Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
- Stir in garlic, tomato paste, smoked paprika, and cayenne pepper. Cook for 1 minute.
- Pour in Guinness stout and beef broth. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
- Return the beef to the pot. Add potatoes and bay leaf.
- Reduce heat to low, cover, and simmer for 2-3 hours, or until the beef is tender.
- Remove bay leaf before serving.

- Serve with crusty bread for dipping.
- Adjust the amount of cayenne pepper to your preferred spice level.
