Strawberry Basil Gazpacho

Description

A refreshing cold soup with strawberries and basil.


Ingredients

  • 1 pound strawberries, hulled
  • 1 cucumber, peeled and chopped
  • 1/2 red onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste


Instructions

  1. Combine strawberries, cucumber, red onion, red bell pepper, and basil in a blender.
  2. Add olive oil and red wine vinegar.
  3. Blend until smooth.
  4. Season with salt and pepper.
  5. Chill for at least 30 minutes before serving.

Notes

  • Garnish with extra basil leaves or a drizzle of olive oil.
  • For a spicier soup, add a pinch of cayenne pepper.
