A moist and flavorful pound cake with a rich cream cheese swirl and fresh strawberry flavor.
Ingredients
- 1 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 3 cups granulated sugar
- 6 large eggs
- 3 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup fresh strawberries, mashed
- 1 tsp vanilla extract
Instructions
- Preheat oven to 325°F. Grease and flour a 10-inch bundt pan.
- Beat butter and cream cheese until smooth. Gradually add sugar, beating until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Combine flour, baking powder, and salt. Gradually add to butter mixture, mixing just until combined.
- Fold in mashed strawberries and vanilla.
- Pour batter into prepared pan. Bake for 75-85 minutes or until toothpick comes out clean.
- Cool in pan for 15 minutes, then invert onto wire rack to cool completely.
Notes
- Use room temperature ingredients for best results.
- For intense strawberry flavor, mix 1/4 cup strawberry jam into batter.
- Store covered at room temperature for up to 3 days.
