Ingredients
- 4 mini pumpkins
- 1 cup cooked quinoa
- 1/2 cup chopped mushrooms

Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the mini pumpkins and scoop out the seeds.
- In a pan, heat olive oil and sauté onions and mushrooms until soft.
- Mix the cooked quinoa, sautéed vegetables, and cheese in a bowl. Season with salt and pepper.
- Stuff the mixture into the mini pumpkins.
- Place the stuffed pumpkins on a baking sheet and bake for 25-30 minutes until tender.
