Ingredients

  • 1 medium pumpkin (about 3-4 lbs)
  • 1 cup cooked rice
  • 1/2 lb ground beef or turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup shredded cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 tsp dried thyme


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut off the top of the pumpkin and scoop out seeds.
  3. Heat olive oil in a pan. Cook onion and garlic until soft.
  4. Add ground meat and cook until browned. Season with salt, pepper, and thyme.
  5. Mix cooked meat with rice and half the cheese.
  6. Stuff the pumpkin with the mixture and top with remaining cheese.
  7. Bake for 45-60 minutes or until pumpkin is tender.
  8. Let cool for 5 minutes before serving.
