Ingredients
- 1 medium pumpkin (about 3-4 lbs)
- 1 cup cooked rice
- 1/2 lb ground beef or turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1/2 cup shredded cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C).
- Cut off the top of the pumpkin and scoop out seeds.
- Heat olive oil in a pan. Cook onion and garlic until soft.
- Add ground meat and cook until browned. Season with salt, pepper, and thyme.
- Mix cooked meat with rice and half the cheese.
- Stuff the pumpkin with the mixture and top with remaining cheese.
- Bake for 45-60 minutes or until pumpkin is tender.
- Let cool for 5 minutes before serving.
Notes
- Use any type of cheese you prefer.
- You can substitute rice with quinoa or couscous.
- For a vegetarian version, replace meat with mushrooms or lentils.
