Description

A hearty stuffed pumpkin filled with seasoned meat, perfect for autumn dinners.


Ingredients

  • 1 medium pumpkin (about 3-4 lbs)
  • 1 lb ground beef or lamb
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil
  • 1/4 cup chopped parsley


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the top off the pumpkin and scoop out the seeds and pulp.
  3. Heat olive oil in a pan and sauté onion and garlic until soft.
  4. Add ground meat and cook until browned. Season with salt, pepper, and paprika.
  5. Mix in cooked rice and parsley.
  6. Stuff the pumpkin with the meat mixture and replace the top.
  7. Bake for 45-60 minutes until the pumpkin is tender.
  8. Let cool slightly before serving.
