Description
A hearty stuffed pumpkin filled with seasoned meat, perfect for autumn dinners.
Ingredients
- 1 medium pumpkin (about 3-4 lbs)
- 1 lb ground beef or lamb
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tbsp olive oil
- 1/4 cup chopped parsley
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the top off the pumpkin and scoop out the seeds and pulp.
- Heat olive oil in a pan and sauté onion and garlic until soft.
- Add ground meat and cook until browned. Season with salt, pepper, and paprika.
- Mix in cooked rice and parsley.
- Stuff the pumpkin with the meat mixture and replace the top.
- Bake for 45-60 minutes until the pumpkin is tender.
- Let cool slightly before serving.
Notes
- Use a firm pumpkin for better texture.
- Adjust spices to your taste.
- Leftovers can be stored in the fridge for up to 3 days.
