Description
A classic sweet potato casserole topped with melted marshmallows.
Ingredients
- 4 cups mashed cooked sweet potatoes
- 1/2 cup granulated sugar
- 1/2 cup milk
- 2 eggs, beaten
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the mashed sweet potatoes, granulated sugar, milk, beaten eggs, melted butter, and vanilla extract. Mix until well combined.
- Pour the sweet potato mixture into a greased 9×13 inch baking dish.
- Bake for 25-30 minutes, or until the casserole is heated through.
- Remove the casserole from the oven and sprinkle the mini marshmallows evenly over the top.
- Return the casserole to the oven and bake for another 5-10 minutes, or until the marshmallows are golden brown and melted.
- Serve hot.
Notes
- For a richer flavor, you can add a pinch of cinnamon or nutmeg to the sweet potato mixture.
- Ensure your sweet potatoes are fully cooked and mashed before starting.
