Description

A classic sweet potato casserole topped with melted marshmallows.


Ingredients

  • 4 cups mashed cooked sweet potatoes
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 2 eggs, beaten
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the mashed sweet potatoes, granulated sugar, milk, beaten eggs, melted butter, and vanilla extract. Mix until well combined.
  3. Pour the sweet potato mixture into a greased 9×13 inch baking dish.
  4. Bake for 25-30 minutes, or until the casserole is heated through.
  5. Remove the casserole from the oven and sprinkle the mini marshmallows evenly over the top.
  6. Return the casserole to the oven and bake for another 5-10 minutes, or until the marshmallows are golden brown and melted.
  7. Serve hot.

Notes

  • For a richer flavor, you can add a pinch of cinnamon or nutmeg to the sweet potato mixture.
