Description

A flavorful Thai yellow curry with chicken and vegetables.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon yellow curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (13.5 ounce) can coconut milk
  • 1 cup chicken broth
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • Cooked rice, for serving


Instructions

  1. Heat the oil in a large skillet or pot over medium-high heat.
  2. Add the chicken and cook until browned.
  3. Add the onion and garlic and cook until softened.
  4. Stir in the curry powder, cumin, turmeric, and cayenne pepper (if using). Cook for 1 minute.
  5. Pour in the coconut milk and chicken broth. Bring to a simmer.
  6. Add the bell pepper and broccoli. Cook until the vegetables are tender.
  7. Stir in the cilantro, fish sauce, and lime juice.
  8. Serve over cooked rice.

Notes

  • Adjust the amount of cayenne pepper to your taste.
  • You can add other vegetables, such as potatoes or carrots.
  • For a thicker curry, simmer for a longer time.
