Description
A flavorful Thai yellow curry with chicken and vegetables.
Ingredients
- 1 tablespoon vegetable oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon yellow curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 1 (13.5 ounce) can coconut milk
- 1 cup chicken broth
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1/4 cup chopped fresh cilantro
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- Cooked rice, for serving
Instructions
- Heat the oil in a large skillet or pot over medium-high heat.
- Add the chicken and cook until browned.
- Add the onion and garlic and cook until softened.
- Stir in the curry powder, cumin, turmeric, and cayenne pepper (if using). Cook for 1 minute.
- Pour in the coconut milk and chicken broth. Bring to a simmer.
- Add the bell pepper and broccoli. Cook until the vegetables are tender.
- Stir in the cilantro, fish sauce, and lime juice.
- Serve over cooked rice.
Notes
- Adjust the amount of cayenne pepper to your taste.
- You can add other vegetables, such as potatoes or carrots.
- For a thicker curry, simmer for a longer time.
