Description
A hearty and warming soup perfect for cold winter days.
Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 8 cups vegetable broth
- 1 cup pearl barley
- 1 bay leaf
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups mixed winter vegetables (such as butternut squash, parsnips, and kale), chopped
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute more.
- Pour in vegetable broth, add barley, bay leaf, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add winter vegetables and cook until tender, about 15-20 minutes.
- Remove bay leaf before serving.
- Garnish with fresh parsley.
Notes
- You can adjust the vegetables based on your preference.
- For a thicker soup, you can mash some of the vegetables.
