A comforting chicken noodle soup recipe, perfect for when you’re feeling under the weather.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 8 cups chicken broth
- 1 pound boneless, skinless chicken breasts
- 8 ounces egg noodles
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Pour in chicken broth and bring to a boil.
- Add chicken breasts. Reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
- Remove chicken and shred with two forks.
- Add egg noodles to the pot and cook according to package directions.
- Return shredded chicken to the pot. Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- You can add other vegetables like peas or corn.
- For a spicier soup, add a pinch of red pepper flakes.
