Description

A comforting chicken noodle soup recipe, perfect for when you’re feeling under the weather.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 8 ounces egg noodles
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Pour in chicken broth and bring to a boil.
  4. Add chicken breasts. Reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
  5. Remove chicken and shred with two forks.
  6. Add egg noodles to the pot and cook according to package directions.
  7. Return shredded chicken to the pot. Season with salt and pepper.
  8. Garnish with fresh parsley before serving.

Notes

  • You can add other vegetables like peas or corn.
  • For a spicier soup, add a pinch of red pepper flakes.
