A savory pie featuring fresh tomatoes.
Ingredients
- 2 large ripe tomatoes, sliced
- 1/4 cup olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup fresh basil, chopped
- Salt and pepper to taste
- 1 pre-made pie crust
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Place tomato slices on paper towels and sprinkle with salt. Let sit for 15 minutes.
- Heat olive oil in a pan. Sauté onion and garlic until softened.
- Stir in basil, salt, and pepper.
- Place pie crust in a pie dish.
- Sprinkle mozzarella and Parmesan cheese over the crust.
- Arrange tomato slices over the cheese.
- Pour onion mixture over the tomatoes.
- Bake for 40-45 minutes, or until crust is golden and tomatoes are tender.
Notes
- You can add a pinch of red pepper flakes for some heat.
- Serve warm.
