Description

A savory pie featuring fresh tomatoes.


Ingredients

  • 2 large ripe tomatoes, sliced
  • 1/4 cup olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup fresh basil, chopped
  • Salt and pepper to taste
  • 1 pre-made pie crust
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place tomato slices on paper towels and sprinkle with salt. Let sit for 15 minutes.
  3. Heat olive oil in a pan. Sauté onion and garlic until softened.
  4. Stir in basil, salt, and pepper.
  5. Place pie crust in a pie dish.
  6. Sprinkle mozzarella and Parmesan cheese over the crust.
  7. Arrange tomato slices over the cheese.
  8. Pour onion mixture over the tomatoes.
  9. Bake for 40-45 minutes, or until crust is golden and tomatoes are tender.

Notes

  • You can add a pinch of red pepper flakes for some heat.
