Description
Crispy baked mac and cheese bites infused with truffle flavor, perfect for appetizers.
Ingredients
- 1 pound elbow macaroni
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 3 cups whole milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Gruyere cheese
- 2 tablespoons truffle oil
- 1/2 cup panko breadcrumbs
- 2 tablespoons melted butter
Instructions
- Cook macaroni according to package directions; drain and set aside.
- Melt 1/2 cup butter in a large saucepan over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
- Remove from heat. Stir in salt, pepper, nutmeg, cheddar cheese, Gruyere cheese, and truffle oil until cheese is melted and smooth.
- Add cooked macaroni to the cheese sauce and stir to combine.
- Spread the mixture evenly into a greased 9×13 inch baking dish. Chill for at least 2 hours, or until firm.
- Preheat oven to 400°F (200°C).
- Cut the chilled mac and cheese into 1-inch squares.
- In a small bowl, combine panko breadcrumbs and 2 tablespoons melted butter.
- Dip each mac and cheese square into the breadcrumb mixture, coating all sides.
- Place coated bites on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until golden brown and heated through.
- Serve warm.
Notes
- For a stronger truffle flavor, add an extra teaspoon of truffle oil.
- You can prepare the mac and cheese mixture a day in advance and refrigerate.
- These bites can be reheated in the oven at 350°F (175°C) for about 10 minutes.
