Description

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup buttermilk
  • 2 tsp baking powder
  • 1 vanilla bean, seeds scraped
  • 1 cup fresh cranberries, chopped
  • 1/2 cup cranberry sauce
  • 2 cups vanilla buttercream frosting


Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. Combine flour, baking powder, and salt in a medium bowl.
  3. Cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla bean seeds.
  4. Alternate adding dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients.
  5. Fold in chopped cranberries. Divide batter evenly between pans.
  6. Bake for 25-30 minutes until a toothpick comes out clean. Cool cakes completely.
