Description
A creamy and flavorful Indian curry with mixed vegetables.
Ingredients
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup mixed vegetables (carrots, peas, beans, etc.)
- 1 cup vegetable broth
- 1/2 cup coconut milk
- 1/4 cup cashew paste
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan. Add onion and sauté until golden.
- Add garlic, ginger, cumin, coriander, turmeric, and cayenne pepper. Cook for a minute.
- Add mixed vegetables and cook for 5 minutes.
- Pour in vegetable broth and bring to a simmer.
- Stir in coconut milk and cashew paste. Season with salt.
- Simmer until vegetables are tender.
- Garnish with cilantro.
