Vegetarian Colcannon Soup

Description

A creamy and comforting soup with potatoes, cabbage, and leeks.


Ingredients

  • 1 tbsp olive oil
  • 2 leeks, sliced and washed
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 lb potatoes, peeled and cubed
  • 4 cups shredded cabbage
  • Salt and pepper to taste
  • 1/2 cup milk or cream
  • Chopped chives for garnish


Instructions

  1. Heat olive oil in a large pot. Add leeks and cook until softened.
  2. Add garlic and cook for 1 minute.
  3. Pour in vegetable broth, add potatoes, and bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Add cabbage and cook until wilted.
  6. Season with salt and pepper.
  7. Stir in milk or cream.
  8. Garnish with chives before serving.

Notes

  • For a thicker soup, mash some of the potatoes.
  • You can add other vegetables like carrots or celery.
