Ingredients
- 1 medium-sized pumpkin
- 1 cup cooked quinoa
- 1 cup chopped mushrooms
- 1/2 cup diced onions
- 1/2 cup chopped spinach
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the top off the pumpkin and remove the seeds.
- In a pan, sauté onions, mushrooms, and spinach in olive oil until soft.
- Mix the sautéed vegetables with quinoa, garlic powder, smoked paprika, salt, and pepper.
