Description

A flavorful soup perfect for a romantic Valentine’s Day dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mixed wild mushrooms, sliced
  • 4 cups vegetable broth
  • 1/2 cup dry red wine
  • 1/4 cup heavy cream
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook until softened. Add garlic and cook for 1 minute.
  3. Add mushrooms and cook until browned.
  4. Pour in vegetable broth and red wine. Bring to a simmer.
  5. Reduce heat and simmer for 15 minutes.
  6. Stir in heavy cream and parsley. Season with salt and pepper.
  7. Serve hot.

Notes

  • For a thicker soup, blend a portion of the soup before adding the cream.
  • Garnish with a swirl of cream and a sprinkle of parsley.
