Description
A flavorful soup perfect for a romantic Valentine’s Day dinner.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces mixed wild mushrooms, sliced
- 4 cups vegetable broth
- 1/2 cup dry red wine
- 1/4 cup heavy cream
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and cook until softened. Add garlic and cook for 1 minute.
- Add mushrooms and cook until browned.
- Pour in vegetable broth and red wine. Bring to a simmer.
- Reduce heat and simmer for 15 minutes.
- Stir in heavy cream and parsley. Season with salt and pepper.
- Serve hot.
Notes
- For a thicker soup, blend a portion of the soup before adding the cream.
- Garnish with a swirl of cream and a sprinkle of parsley.
