Description

A refreshing and healthy salad perfect for winter. It combines the heartiness of kale with the bright flavors of citrus.


Ingredients

  • 1 bunch kale, chopped
  • 1 orange, peeled and segmented
  • 1/2 cup pomegranate seeds
  • 1/4 cup sliced almonds
  • 1/4 cup olive oil
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste


Instructions

  1. In a large bowl, massage the kale with a little olive oil to soften it.
  2. Add the orange segments, pomegranate seeds, and almonds to the bowl.
  3. In a small bowl, whisk together the olive oil, orange juice, lemon juice, and honey for the vinaigrette. Season with salt and pepper.
  4. Pour the vinaigrette over the salad and toss to combine.
  5. Serve immediately.

Notes

  • For a creamier dressing, add a teaspoon of Dijon mustard.
