A refreshing and healthy salad perfect for winter. It combines the heartiness of kale with the bright flavors of citrus.
Ingredients
- 1 bunch kale, chopped
- 1 orange, peeled and segmented
- 1/2 cup pomegranate seeds
- 1/4 cup sliced almonds
- 1/4 cup olive oil
- 2 tablespoons orange juice
- 1 tablespoon lemon juice
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, massage the kale with a little olive oil to soften it.
- Add the orange segments, pomegranate seeds, and almonds to the bowl.
- In a small bowl, whisk together the olive oil, orange juice, lemon juice, and honey for the vinaigrette. Season with salt and pepper.
- Pour the vinaigrette over the salad and toss to combine.
- Serve immediately.
Notes
- For a creamier dressing, add a teaspoon of Dijon mustard.
