Description

A hearty and flavorful salad perfect for colder months.


Ingredients

  • 1 pound Brussels sprouts, trimmed and thinly sliced
  • 1 cup cooked quinoa
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1/4 cup crumbled feta cheese
  • For the dressing: 3 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon Dijon mustard, salt and pepper to taste


Instructions

  1. In a large bowl, combine Brussels sprouts, quinoa, cranberries, pecans, and feta cheese.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.
  3. Pour dressing over salad and toss to combine.
  4. Serve immediately or chill for later.

Notes

  • For a vegan option, omit the feta cheese.
  • Add grilled chicken or salmon for a complete meal.
