A hearty and flavorful salad perfect for colder months.
Ingredients
- 1 pound Brussels sprouts, trimmed and thinly sliced
- 1 cup cooked quinoa
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans
- 1/4 cup crumbled feta cheese
- For the dressing: 3 tablespoons olive oil, 1 tablespoon balsamic vinegar, 1 teaspoon Dijon mustard, salt and pepper to taste
Instructions
- In a large bowl, combine Brussels sprouts, quinoa, cranberries, pecans, and feta cheese.
- In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Serve immediately or chill for later.

- For a vegan option, omit the feta cheese.
- Add grilled chicken or salmon for a complete meal.
